PEAS WITH ORANGE & MINT image

Number Of Ingredients 7

5 tbs unsalted butter
3 large shallots, peeled & thinly sliced, coarsely chopped
4 cups green peas
1/3 cup orange juice
salt & pepper
4 tbs mint leaves, finely chopped
Peel of 1 orange, thinly julienned

Steps:

  • 1. heat butter in 12" skillet over medium heat. 2. Add sahllots, cook until soft, stirring often, about 4 mins. 3. Add peas, juice, salt & pepper. Cook stirring often, until heated through, about 5 mins. 4. Remove from heat. Stir in mint and orange peel. Serve.
