Yield Serves 6

Number Of Ingredients 10

2 tablespoons olive oil
1 medium onion, chopped
4 garlic cloves, minced
3 1/2 pounds tomatoes, peeled, seeded, chopped, or 3 cups diced canned tomatoes with juices
1 teaspoon dried oregano
1 teaspoon dried thyme
1/4 teaspoon sugar
12 ounces penne, rigatoni or fusilli pasta
6 ounces arugula (about 6 bunches), tough stems trimmed, leaves scoarsely chopped
3/4 cup freshly grated Pecorino Romano cheese

Steps:

  • Heat oil in large nonstick skillet over medium heat. Add onion and sauté until tender, about 5 minutes. Add garlic and sauté 1 minute. Add tomatoes, herbs and sugar. Reduce heat and simmer until mixture thickens, stirring frequently, about 20 minutes. Season to taste with salt and pepper. (Sauce can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before using.)
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Add arugula and cook until wilted, about 1 minute. Drain. Return pasta and arugula to pot. Add sauce and toss to coat. Season to taste with salt and pepper. Divide pasta among plates. Sprinkle with cheese and serve.

This recipe is a bit too salty for my taste. I would recommend using less Parmesan cheese or omitting it altogether.

I'm not sure why this recipe calls for pine nuts. I think they're a bit too expensive and don't really add much to the dish.

This pasta dish is a great way to use up leftover tomatoes. It's also a great way to get your kids to eat their vegetables.

I'm not a huge fan of arugula, but I thought it worked really well in this dish. The bitterness of the arugula balanced out the sweetness of the tomatoes perfectly.

This recipe was a great starting point, but I made a few changes to suit my own taste. I added some red pepper flakes for a bit of heat and used a different type of cheese.

Overall, I thought this dish was just okay. It wasn't bad, but it wasn't anything special either.

I found this recipe to be a bit too time-consuming. I would have preferred a simpler version with fewer ingredients.

This pasta dish was a bit too bland for my taste. I would have liked more garlic and Parmesan cheese.

The combination of flavors in this dish was spot-on. The tomatoes and arugula were perfectly balanced by the salty Parmesan and nutty pine nuts.
