Steps:
- Preheat oven to 350 degrees F. Sift together flour, sugar, baking powder, and cinnamon. Mix banana, honey, egg, vegetable oil, and vanilla extract in another bowl. Add the banana mixture and pine nuts into the dry ingredients (dough will be sticky). Divide the dough into two halves and make each half into a 8-inch long log on a baking sheet lined with parchment paper. Bake for 23 minutes. Cool the logs on wire rack for 20 minutes. Slice the logs into 1 cm thick slices and bake again at 250 degrees F, cut side down, for 15 to 30 minutes, depending on the hardness desired. Turn the cookies over and bake again for the same length of time. Cool on wire racks.
