Porcupine Meatballs With a Twist image

A delicious one pot meatball meal with rice and stuffed with cubes of Velveeta cheese, simmered in a tomato-Worcestershire sauce. I copied and adapted this recipe from an old french canadian booklet over 35 years ago and it's still a favorite in our house. Its a meal in itself but I always serve it with a fresh chef salad and mashed potatoes.

This recipe is a great way to use up leftover rice. I always have some leftover rice in the fridge and this is a perfect way to use it up.

I'm not a big fan of meatballs, but these were actually really good. The sauce was especially tasty.

The meatballs were a bit dry for my taste, but the sauce was delicious. I'll try adding more moisture to the meatballs next time.
