Potato Chip Chicken Casserole image

This makes a tasty casserole using left over chicken or turkey. It can be made ahead of time, just add the potato chips right before baking. I cook the rice in chicken broth for more flavor, but it is not necessary. This recipe can easily be doubled.

I love this recipe! It's so easy to make and always turns out great. I like to use different types of potato chips, depending on what I have on hand. BBQ chips are a favorite, but sour cream and onion or regular potato chips work well too.
