POTATO GRATIN DIJONNAISE image

Number Of Ingredients 10

3 lb potatoes
2 Tbsp butter
1 large yellow onion, thinkly sliced
salt & pepper
2 Tbsp fresh chervil or 2 tsp dried
1/2 cup chopped fresh parsley
2 cups creme fresh
3 heaping Tbsp Dijon mustard
1/4 cup lemon juice
4 oz grated gruyere or emmenthaler cheese

Steps:

  • Preheat the oven to 400 degrees and butter a 12" wide gratin dish.. Peel and boil the potatoes until barely tender. Cool and slice into 1/3" rounds. Melt the butter and add onions. Saute until golden, about 15 minutes. Put the potatoes and onions in a large bowl, and season with salt and pepper. Sprinkle with chervil and parsley. In a separate bowl, mix the creme fresh, mustard, and lemon juice. Add to potatoes and onions, and mix gently. Turn into the prepared gratin dish and smooth until evenly distributed. Sprinkle with cheese. Bake in oven about 30 minutes, until brown on top
