Time 20m

Yield 3

Number Of Ingredients 13

6 ounces whole wheat penne pasta
¾ cup pumpkin puree
¾ cup low sodium chicken broth
¼ cup nonfat milk
1 teaspoon margarine
¼ teaspoon onion powder
¼ teaspoon ground black pepper
¼ teaspoon salt
1 pinch ground cloves
1 pinch ground nutmeg
1 pinch ground cinnamon
1 pinch ground ginger
¼ cup grated Parmesan cheese, plus more for serving

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
  • Heat the pumpkin puree, chicken broth, milk, margarine, onion powder, black pepper, salt, cloves, nutmeg, cinnamon, and ginger in a large skillet over low heat until heated through, about 5 minutes. Stir in the drained pasta, and toss with the Parmesan cheese.

Overall, I really enjoyed this pumpkin pasta recipe. It was easy to make, delicious, and a great way to use up leftover pumpkin puree.

I topped the pasta with some grated Parmesan cheese and it was the perfect finishing touch.

I added some chopped kale to the pasta for extra nutrition. It was a great addition and I would definitely recommend it.

I accidentally used heavy cream instead of milk in the sauce. It was still delicious, but it was a bit too rich for my taste.

I didn't have any pumpkin puree on hand, so I used butternut squash puree instead. It worked out fine, but the sauce was a bit more orange than I expected.

This recipe was a bit too complicated for me. I think I'll stick to simpler pasta recipes in the future.

The pasta was a bit overcooked for my taste, but that's probably because I didn't pay close enough attention to the cooking time.

I found that the sauce was a bit too thick for my liking. I might try thinning it out with some milk or cream next time.

This pasta was a bit too sweet for my taste, but I think that's just a personal preference. I might try making it again with less sugar.

This pumpkin pasta was a huge hit with my family! The sauce was creamy and flavorful, and the pasta was cooked perfectly. I also loved the addition of the goat cheese and walnuts, which added a nice touch of texture and flavor.
