Queso fondue image

This is a GREAT, easy Mexican "fondue.I serve them w/ baked tortilla chips, but I'm sure some fresh veggies would taste good w/ this too.

1/2 lb chorizo sausages, casings removed
1/4 c chopped onion
10 oz reduced-fat, shredded monterey jack cheese, or mexican blend cheese
2 Tbsp canned diced tomatoes w/ green chiles, drained

Steps:

  • 1. Preheat broiler. Spray a medium-sized casserole dish w/ cooking speay, lightly.
  • 2. In skillet over med-high heat, brown the sausages, breaking it up as you brown them. Drain off any fat. Reserve 1 tbsp of the sausages. Spread sausages into bottom of casserole dish.
  • 3. Place cheese and tomatoes w/ chiles in a microwaveable bowl. Microwave in 15 second intervals, stirring until melted and combined. Spread cheese mix over sausages. Place top oven rack 6" from heat. Place casserole dish on top rack. Broil until cheese turns golden. Sprinkle w/ reserved sausages. Serve w/ tortilla chips.
