Quick Mexican Pizza image

This recipe was handed down to me from Mrs Pauline Sharp who founded my childhood church.

Number Of Ingredients 11

2 c (8 oz.) shredded colby/monterey jack cheese
1/2 lb ground beef
4 flour tortillas (10-inch each)
1 c salsa
1 1/2 tsp chili powder
1/2 tsp cumin
OPTIONAL
green bell pepper
red bell pepper
onion
mushrooms

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. Cook meat; drain.
  • 3. Stir in seasonings.
  • 4. Spread 1/4 cup salsa and 1/2 meat mixture on each tortilla.
  • 5. Top each with 1/2 cup cheese and optional toppings.
  • 6. Bake in preheated oven at 400 degrees F oven for 8 to 10 or until crisp and lightly browned.

This pizza is a great way to use up leftover ingredients. I had some leftover chicken and black beans and they worked perfectly in this recipe.
