Raw Pad Thai image

Contributed by juleskess on goneraw.com, this was my very first raw meal dish. I have been eating Raw but I was not really putting anything into "preparing" something. This is very good and makes eating raw more interesting. The colors are lovely and the meal is healthy!

This recipe is a great way to use up leftover vegetables. I had some zucchini, carrots, and bell peppers that I needed to use up, and they worked perfectly in this dish.

I was a bit skeptical about making raw pad thai, but I'm so glad I did! It was absolutely delicious. The zucchini noodles were a great substitute for rice noodles, and the sauce was packed with flavor.
