RECOVERY ROOM'S CHOPPED PASTA SALAD image

Number Of Ingredients 18

1 cup olive oil
1/3 cup balsamic vinegar
1 clove garlic, chopped
1 tbsp fresh basil, chopped
10 oz. green leaf lettue,
rough chop
2 vine-ripened tomatoes,
quartered
3 oz. mushrooms, sliced
5 oz. penne pasta,
cooked and chopped
4 oz. bacon,
cooked and chopped
8 oz. grilled chicken,
chopped
6 oz. crumbled gorgonzola
1/2 med. red onion, diced
salt and ground pepper

Steps:

  • Grill chicken and allow to cool (may be done ahead). Cook the pasta per package instructions, rinse and chill. In a bowl, whisk the salt, pepper, garlic, basil and vinegar. Slowly whisk in the olive oil until the dressing emulsifies into a smooth sauce. Combine the lettuce, tomato, onion, muchrooms, bacon, pasta, cheese and chicken in a large bowl. Pour the dressing over and hand-toss to thoroughly coat. Serve immediately.
