I'm always looking for healthy side dishes, and this recipe fits the bill perfectly. The carrots are packed with nutrients and the honey-mint glaze is a healthier alternative to traditional sugary glazes.

I served these carrots with a side of roasted chicken and they were the perfect complement. The sweetness of the carrots balanced out the savory chicken perfectly.

I roasted the carrots for a bit longer than the recipe called for, and they turned out perfectly caramelized. They were so good!

I'm not a big fan of mint, so I omitted it from the recipe. The carrots were still delicious, but I think the mint would have added a nice flavor.

I'm not a big fan of honey, so I used maple syrup instead. The carrots turned out great! They were sweet and flavorful without being too overpowering.

I followed the recipe exactly, but my carrots didn't turn out as tender as I would have liked. I'm not sure what went wrong.

These carrots were a bit too sweet for my taste, but they were still good. I think I'll try them again with less honey next time.
