This dish is a great way to use up leftover vegetables. I had some leftover carrots, parsnips, Brussels sprouts, and broccoli, so I roasted them up with some olive oil, salt, and pepper. They turned out great!

I added a few sprigs of fresh thyme to the roasting pan, which gave the vegetables a delicious herb flavor. I also served the vegetables with a dollop of sour cream, which was the perfect finishing touch.

I roasted the vegetables at a slightly higher temperature than the recipe called for, and they turned out perfectly crispy. I highly recommend doing this if you like your roasted vegetables with a little bit of a crunch.
