Roasted Italian Potatoes image

This uses an envelope of dry dressing mix, such as Good Seasons Italian.

1/4 c olive oil
0.7 oz envelope italian drssing mix (good seasons)
1 large shallot, peeled and sliced
2 lb red or white potatoes (about 5 potatoes)
salt and pepper

Steps:

  • 1. Preheat oven to 400F.
  • 2. Mix oil and dressing mix in a large bowl until blended.
  • 3. Do not peel potatoes. Cut them in half and then quarter each half.
  • 4. Toss potatoes and shallot slices in the dressing mix until well coated. Season with salt and pepper.
  • 5. Place in a baking dish, in a single layer. Bake 40 minutes, or until done.
