Steps:
- 1. Preheat oven to 400F.
- 2. Mix oil and dressing mix in a large bowl until blended.
- 3. Do not peel potatoes. Cut them in half and then quarter each half.
- 4. Toss potatoes and shallot slices in the dressing mix until well coated. Season with salt and pepper.
- 5. Place in a baking dish, in a single layer. Bake 40 minutes, or until done.
