Rustic Dinner Pie image

Quick and easy recipe even the kids or grandkids can help with this, as it is so unstructured. So take a break during the coming holidays and make this at home- fun to do with friends in the kitchen helping out adding their favorite topping or sliced fresh fruit. You can use leftover shredded chicken, turkey, ham, or crumbled...

6 slice bacon, cooked crisp,chopped, or other meat
8 1/2 oz pkg. corn muffin mix
2/3 c bisquick baking mix
1 tsp chili powder, to taste
1 large egg, lightly beaten
1/4 c milk
3 medium granny smith apples, cored and thinly sliced, or other fresh fruit
1/3 c blue cheese crumbles, to taste
sprig(s) fresh thyme, optional or other herbs

Steps:

  • 1. Preheat oven to 400^. In a skillet cook bacon until crisp. Drain; reserve 1 Tablespoon drippings. Chop bacon.
  • 2. In a medium bowl combine the muffin mix, Bisquick, chili powder, egg and milk, just until moistened. Divide dough into four portions. Place 2 portions each on a greased baking sheet and press to 6 or 7 inch circles.
  • 3. Top each circle with a layer of fruit slices, leaving a 1-inch border. Fold edges around fruit slices. Brush fruit and crust with reserved bacon drippings or butter.
  • 4. Bake 10 minutes. Top with cheese and meat; bake 5-7 minutes more until edges are golden and bottom crust is set. Sprinkle with your favorite herb or spice and drizzle with maple syrup. Enjoy you deserve it!
