Salmon and Sweet Potato Patties image

This combines 2 of my favourite foods salmon and sweet potato and being diabetic friendly is a big bonus. From BH&G Australian Diabetic Living. They suggest serving it with a garden salad or you could stuff into pita bread with salad or put them in a wrap with salad or on bread or roll of choice.

These patties were a bit too dry for my taste. I think I would add more sweet potato next time. But overall, they were still tasty and I would make them again.

I'm not a big fan of salmon, but these patties were surprisingly good! The sweet potato helped to balance out the flavor of the salmon and the patties were very moist. I would definitely make these again.
