Salmon Pilaf with Green Onions image

One of my family's favorite meatless monday recipes which I found on delish

Number Of Ingredients 6

1 1/4 c long grain rice, uncooked
1 bunch green onions
1 Tbsp olive oil
pepper to taste
1 lb salmon, skinless filet (cubed into 1 inch chunks)
1/4 c teriyaki sauce

Steps:

  • 1. Prepare rice according to package instructions
  • 2. when rice is about 10 minutes to being done, heat oil in skillet (1 minute or less). Add onions and cook a few minutes, stirring occasionally. Season salmon with pepper. Add salmon to skillet and cook 7-8 minutes until opaque throughout. Remove from heat and spoon off any fat. Leave salmon/onion in skillet.
  • 3. Stir cooked rice and teriyaki sauce until blended. Check seasoning and adjust if needed. Garnish with green onions and serve.
