Santa Fe Chicken Salad image

Where I used to live, there was a restaurant that made a wonderful salad with most of these ingredients. This is an embellished fusion version of it. If the chimichurri is made with cilantro, all the better!

2 c chopped romaine lettuce
4 oz grilled chicken breast or rotisserie chicken
1/4 c black beans, canned
2 Tbsp frozen corn, thawed
1 Tbsp red onion, minced
4 cherry tomatoes, halved
1/4 small avocado, diced
2 Tbsp cotija cheese, crumbled
1-2 tsp sour cream, lite or regular
1-2 tsp lime juice
1 Tbsp chimichurri sauce
crispy tortilla strips, or crumbled tortilla chips for garnish

Steps:

  • 1. Line large plate with romaine. Slice or shred chicken and place on lettuce.
  • 2. Distribute beans, onions, corn, tomatoes and avocado over chicken. Sprinkle cotija cheese over top.
  • 3. Thin sour cream with lime juice so it's pourable. Zig-zag sour cream across salad. Zig-zag chimichurri sauce across salad in opposite direction. Garnish with crispy tortilla strips.
