Sausage and Beef Casserole image

I received this recipe from my mothers best friend Lucy. This is one of my favorite meals. This is a great dish for pot-lucks. It would also be great on a cold winters night. I also like to make it a day or two before it is to be eaten.

I'm not a big fan of sausage, but I really enjoyed this casserole. The beef and vegetables balanced out the flavor of the sausage.

This casserole was a hit with my family! The flavors of the sausage and beef blended perfectly, and the addition of the vegetables gave it a nice crunch. I also liked that it was a one-pot meal, which made cleanup a breeze.
