I've made this dish several times now, and it's always a crowd-pleaser. The sausage and hominy are a great combination, and the eggs add a nice touch of protein. I usually serve it with some toast or pancakes, and it's always a hit.

This recipe was a little bland for my taste. I think it could use some more seasoning, maybe some chili powder or cumin. The sausage and hominy were cooked well, but the eggs were a little overcooked for my liking.

This recipe was a little too spicy for my taste, but I still enjoyed it. The sausage and hominy were cooked well, and the eggs were fluffy. I think next time I'll use a milder sausage or add some sour cream to tone down the heat.
