Savory Pork Chops With Caramelized Onions image

Another family favorite. The onions are such a great complement to the pork chops. From otherwhitemeat.com.

4 pork rib chops, each about 1 1/2-inches thick
4 tsp cajun seasoning
1 tsp freshly ground pepper
CARAMELIZED ONIONS:
4 c chopped sweet onions
2 Tbsp olive oil
1 Tbsp brown sugar
2 Tbsp balsamic vinegar
1 Tbsp lemon juice
1/4 tsp salt
1/4 tsp pepper

Steps:

  • 1. Sprinkle pork chops evenly with Cajun seasoning and pepper.
  • 2. Grill, covered with grill lid, over medium high heat (350°F to 400°F) 8 minutes on each side.
  • 3. Serve with Caramelized Onions.
  • 4. CARAMELIZED ONIONS: Cook onion in hot olive oil in a large skillet over medium-high heat, stirring often, 10 to 12 minutes or until golden. Sprinkle with sugar, and cook 2 minutes. Add vinegar and next 3 ingredients, and cook 2 minutes. Serve warm or cold.
  • 5. Makes about 1 1/2 cups onions.

I'm not sure what went wrong, but this dish was inedible. The pork chops were dry and the caramelized onions were bitter. I would not recommend this recipe to anyone.
