This chowder is a great way to use up leftover corn on the cob. I just cut the kernels off the cob and add them to the soup.

I'm not a big fan of shrimp, so I used chicken in my chowder instead. It turned out great! The chicken was tender and flavorful.

I added some chopped cilantro to my chowder and it really brightened up the flavor. I also used a can of fire-roasted corn, which gave the soup a nice smoky flavor.

I made this chowder in my slow cooker and it turned out great. I just threw all of the ingredients in the slow cooker in the morning and dinner was ready when I got home from work.

This chowder was a bit too spicy for my taste, but I think that's because I used a hotter poblano pepper than the recipe called for. Other than that, it was a great soup.
