Steps:
- In a large fry pan over medium heat, warm the 1 Tbs. olive oil. Add the bread crumbs and saute until browned, about 4 minutes. Season with salt and pepper and transfer to a bowl.
- In the same pan over low heat, warm 1/2 cup oil (or 2 Tbs. butter), add garlic and saute until fragrant, 1 to 2 minutes. Optional - add 2 Tbs flour, cook 1-2 mins, add 1 cup of wine (and or pasta water) and cook until reduced by half. Cont. with rest of directions.
- Remove from heat and stir in Parmesan and lemon zest and juice. Season with salt & pepper.
- Add cooked pasta to sauce pan and toss. Add pasta water if pasta seems dry.
- Add bread crumbs, parsley, red pepper flakes, and salt and pepper to taste. Top with parmesan.
