Spicy Pork Medallions image

Pork with a Mexican flair, fork tender & savory! I serve with something green & sweet potato.

Number Of Ingredients 7

1 lb pork tenderloin, sliced thin & tenderized
1 large raw, jalapeno pepper
1/2 medium white onion
1 can(s) tomato and chilis (rotel)
1 Tbsp lemon pepper
2 Tbsp worcestershire sauce
1 Tbsp minced garlic

Steps:

  • 1. Slice pork tenderloin & pound with meat tenderizer
  • 2. cover on both sides with spices
  • 3. place in a bowl & cover with sauce, tomato, onion & jalapeno. refrigerate for 30 minutes.
  • 4. spray a skillet with cooking spray & use high heat. add total contents turning often until brown.
  • 5. cover and cook on medium 15-20 minutes. serve hot.
