Steps:
- Beat the eggs by hand in a mixing bowl. Stir in the onion, cheese and melted butter. Stir in the spinach next. Add the croutons and stir until moiste. Let the mixture sit for 15 minutes. Coat a cookie sheet or 13x9 inch pan with cooking spray. Form the mixture into golf-ball size balls and place in pan, not touching. Recipe makes about 18 spinach balls. Bake at 350 degress for 25-30 minutes until slightly brown. Enjoy hot, warm or at room temperature. These are also excellent reheated the next day.
