Spinach Cucumber Strawberry Salad image

5 cups spinach (chopped)
1 1/2 cups chopped strawberries
3 cucumbers (sliced)
1/3 cup chopped pecans
1/4 cup crumbled feta cheese
1/3 cup extra virgin olive oil
1/3 cup balsamic vinegar
1/2 teaspoon crushed garlic
1 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Toss together spinach, strawberries, cucumbers, pecans, and feta cheese.
  • In a small blender, blend together dressing ingredients.
  • Pour desired amount of dressing over salad and toss.
  • Chill in the fridge until ready to serve.
