A casserole from the classic "Diet for a Small Planet", by Frances Moore Lappe. Simple vegetarian fare, serve it with a vegetable in a contrasting color (carrots, crookneck squash, etc.), or make it as a side dish for simply cooked meat.

This dish was easy to make and it was delicious! I used brown rice instead of white rice and it was still great. I also added some chopped carrots and celery to the pot and it gave it a nice crunch. Thanks for sharing this recipe!

This was a great way to use up some leftover spinach. I followed the recipe exactly and it turned out perfectly. The rice was fluffy and the spinach was cooked perfectly. I will definitely be making this again.

I'm not a big fan of spinach but I decided to give this dish a try anyway. I'm glad I did because it was actually really good! The spinach was cooked perfectly and the cheesy filling was delicious. I will definitely be making this again.

This dish was a bit bland for my taste. I think it could have used some more seasoning. I also found that the rice was a bit too mushy. Overall, it was an okay dish but I don't think I'll be making it again.
