Yummy veggie burgers!!!!! image

these veggie burgers are a family favorite, my family clamors for them often...hope you like them tooo!

2 can(s) chic peas
2 can(s) cannellini or any white bean will do
1 yellow squash med size or same of zuchhini if you prefer
1/2 onion
1 stalk celery
1/2 tsp black pepper
1 tsp garlic powder
1 tsp parsley flakes
1 egg beaten
1/2 c cornmeal plus additional for flipping patties in
olive oil for sauteing

Steps:

  • 1. 1. empty all cans into collander and drain over sink 2. heat in microwave for about two mins, to help make easier to mash 3. mash allbeans together thouroughly, a few whole beans throuought is okay...but most should be mashed
  • 2. 4. grate 1/2 of a medium onion 5. grate your choice of a medium squash great celery stick place in several layers of paper towel and over a bowl wring most of the moisture out add to bowl of mashed beans add seasoning you would like or use the ones listed in recipe stir all together well add the 1/2 cup of cornmeal and about 1/2 of the scrambled egg mix it well
  • 3. on a plate put a generous amount of cornmeal, and form patties in hands dpped in cornmeal (will be a little wet) in a non stick skillet put four tablespoons of olive oil and let get hot, carefully slide burgers in...be careful dont crowd them, you need room to work them...let fry on one side till browned flip and fry other side to brown, place on paper towel lined plate, to cool repeat till all cooked note: this mixture keeps well in airtight container in fridge if you want to save it and fry up later in the week...but oh so good! delicious with a good spinach salad...(spinach is something i often add to the burgers for a variant)

I wasn't a fan of these veggie burgers. They were too dry and crumbly. I think they needed more moisture. I also didn't like the flavor. I won't be making these again.
