SPINICH SALAD W/ DRIED CRANBERRIES & PINE NUTS image

Number Of Ingredients 8

-2 Tbsp. Fresh Orange Juice
-1 tsp. balsamic vinegar
-1 tsp. Dijon mustard
-3 Tbsp. estra-virgin olive oil
-Salt and Pepper, to taste
-1 to 6 oz. package Baby Spinich Leaves, rinsed
-2 Tbsp. dried carnberries
-3 Tbsp. pine nuts

Steps:

  • In a sm. bowl combine orange juice, balsamic vinegar, Dijon mustard, olive oil, salt and pepper. Place spinach in lrg. bowl, add dressing gradually so as not to saturate greens, cranberries and pine nuts. Toss lightly and serve.
