Number Of Ingredients 6

1 1/2 teaspoons Parkay Original Spread (tub)
1/4 pound thin fresh asparagus spears, trimmed, cut into 1/2-inch pieces
2 tablespoons green onions, sliced
1/3 cup fully cooked lean ham, finely chopped
1 cup Egg Beaters Original
2 tablespoons reduced fat Colby Jack cheese, shredded

Steps:

  • Melt Parkay in 8-inch nonstick skillet over medium heat. Add asparagus. Cook 5 minutes or until crisp-tender, stirring occasionally. Add onions and ham. Heat 2 minutes more. Pour Egg Beaters over vegetables and ham. Reduce heat to medium-low. Cover and cook 8 minutes or until Egg Beaters are set. Sprinkle with cheese. Cut in half to serve. If a more browned top is preferred, sprinkle with cheese when top is almost set and place under broiler, 2 to 3 inches from heat. Broil 2 minutes or until set and bubbly. Be sure to use skillet with ovenproof handle or cover handle with foil before placing under broiler.

I'm allergic to eggs, so I made this frittata with JUST eggs instead. It turned out great!

This frittata is a great make-ahead breakfast or lunch option. I like to make it on the weekend and then reheat it throughout the week.

I followed the recipe exactly and my frittata turned out rubbery. I'm not sure what went wrong.

This recipe is a bit bland for my taste. I added some garlic and pepper to spice it up a bit.

I'm not a big fan of goat cheese, so I substituted feta cheese instead. It was still delicious!

This frittata is a great way to use up leftover vegetables. I had some asparagus and tomatoes that were about to go bad, so I threw them in the frittata and it turned out great. The goat cheese added a nice tanginess to the dish.

I've made this frittata several times and it's always a crowd-pleaser. It's easy to make and can be customized with different vegetables and cheeses. I like to add a handful of spinach or kale for an extra boost of nutrients.
