STEAK-TOPPING CHIMICHURRI image

Yield 5 cups

Number Of Ingredients 11

3 red bell peppers
1/3 cup fresh oregano leaves
1/2 cup fresh italian parsley
3 large mint leaves
1 clove garlic, peeled
1 large shallot, peeled
1 tsp honey
Pinch dried red pepper flakes
Salt and freshly ground black pepper
1 tbls Spanish sherry vinegar
1/4 cup extra-virgin olive oil

Steps:

  • Brush bell peppers with oil and grill until skins are charred. Place in a paper bag to cool. Place all remaining ingredients in a food processor fitted with metal blade. Process until roughly chopped. Place in bowl. Peel peppers and remove seeds. Tear into strips and add to chimichurri. Toss to combine. Taste and adjsut seasoning as needed. Serve with grilled steak.
