Strawberry Loquat Salsa image

Loquats are a yummy small fruit with the flavors of mango and peach. They are hard to find in the grocery stores. The best places to find them are at a farmer's market or else a friend with a tree! Great over chicken and fish.

20 fresh loquats - seeded, blossom ends removed, and diced
5 large strawberries, hulled and diced
⅔ cup diced red onion
¼ cup chopped cilantro
2 cloves garlic, minced
1 tablespoon lime juice
1 jalapeno pepper, seeded and diced - or to taste
salt and ground black pepper to taste

Steps:

  • Mix loquats, strawberries, red onion, cilantro, garlic, lime juice, jalapeno pepper, salt, and black pepper in a bowl. Refrigerate salsa several hours before serving.
