Strawberry Muffins image

Melt in your mouth, moist muffins. Delicious!

Number Of Ingredients 10

2-1/2 c flour
1/2 c sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1-1/2 c buttermilk
1/3 c melted butter
2 eggs, slightly beaten
1 tsp vanilla
1 pt fresh strawberries, hulled and chopped

Steps:

  • 1. Line muffin cups with paper cupcake liners. In a large bowl, combine flour, sugar, baking powder, baking soda and salt; stir all ingredients until well blended.
  • 2. In another bowl, whisk together the buttermilk, butter, eggs and vanilla. Make a well in the middle of the dry ingredients and pour liquid mixture in and the strawberries. Using a large spoon, fold ingredients just until moistened. DO NOT OVERMIX.
  • 3. Spoon the batter evenly into 12 muffin cups. Sprinkle each muffin with 1/2 tsp. sugar, if desired. Bake at 400 degrees for 20-25 minutes.
