Strawberry Soup IV image

This is a very nice soup to eat during hot summer days. The flavor of the wine in this soup is important, so be sure to use a good one.

Number Of Ingredients 4

1 cup dry white wine
⅓ cup white sugar
2 cups chopped strawberries
1 cup orange juice

Steps:

  • In a small saucepan mix wine and sugar, and bring to a boil. Let boil for 5 minutes and then remove from heat. Let cool.
  • Puree strawberries and wine mixture in a blender or food processor. Blend until very smooth and then stir in orange juice. Chill for at least 3 hours before serving.

Good, but not great. The soup was a bit bland for my taste, even though I added extra lemon juice and sugar. I think it would be better with a little bit of spice, like a pinch of cayenne pepper.
