Strawberry Vinaigrette Salad Dressing image

I ran across this combination on the Smucker's web site. I changed one ingredient and got a very nice flavorful dressing. I took time to run this through the recipe analyzer, and it came out pretty good. 1 serving = 2 tablespoons, which equals 64 calories, 6 grams fat, 4.5 grams carbohydrates, and 20mg sodium.

1/2 c strawberry sugar-free preserves
2 Tbsp balsamic vinegar (or more to taste)
1 1/2 tsp dijon mustard
1/4 tsp ground black pepper
1/4 c water
1/4 c olive oil or canola oil
salt and black pepper, to taste (optional)

Steps:

  • 1. WHISK together preserves, vinegar, mustard, pepper and water in medium bowl until thoroughly blended. Gradually whisk in oil. Season to taste with salt and additional black pepper, if desired.
