Sugar-Topped Applesauce Muffins image

My five brothers, two sisters and I grew up on a farm and built up hearty appetites doing various chores. It seemed no matter what I helped Mom cook was gobbled up. That encouraged me to spend more time in the kitchen!

Yield 1 dozen.

Number Of Ingredients 11

2 cups biscuit/baking mix
1/4 cup sugar
1 teaspoon ground cinnamon
1 egg
1/2 cup applesauce
1/4 cup milk
2 tablespoons vegetable oil
TOPPING:
1/4 cup sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter, melted

Steps:

  • In a bowl, combine the biscuit mix, sugar and cinnamon. In another bowl, beat the egg, applesauce, milk and oil. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 10-12 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. , In a small bowl, combine sugar and cinnamon. Dip muffin tops in melted butter, then in cinnamon-sugar.
