Sunrise Cherry Pie image

Number Of Ingredients 7

1 (8-ounce) can crushed pineapple (in heavy syrup), divided
1 (8-ounce) package cream cheese, softened
1 teaspoon vanilla extract
1 can cherry pie filling, divided
1/4 cup sugar
1 cup heavy cream
1 graham cracker pie crust

Steps:

  • Drain pineapple and reserve 2 tablespoons juice. Combine cream cheese, vanilla, and juice; mix until well blended. Stir in 1/4 cup pineapple and 1/2 cup pie filling. Gradually add sugar to cream in small mixing bowl, beating until soft peaks form. Fold into cheese mixture. Pour into crust. Top center with remaining pie filling, and circle outer edge of pie with remainder of pineapple. Chill until firm. Fun Fact: Michigan produces about 3/4 of the world's tart cherries. Brought over by European settlers, cherry trees only have a productive life of about five years. Traverse City, Michigan, is known as the "Cherry Capital of the World."
