Swedish Cucumber Salad image

Number Of Ingredients 7

2 cucumbers medium (8-inch each)
3 tablespoons white vinegar
4 teaspoons sugar
1 tablespoon parsley chopped fresh
1 teaspoon dill weed chopped fresh
1 teaspoon tarragon chopped fresh leaves
1/4 teaspoon salt

Steps:

  • Peel cucumbers, scoring lengthwise with fork if desired. Thinly slice and place in a medium bowl.In a small bowl, stir vinegar, sugar, parsley, dill, tarragon, and salt. Pour over cucumbers and stir. Cover and refrigerate at least 3 hours for flavor to develop, stirring several times.Serve in a bowl with a slotted spoon.NOTE: Recipe is easily doubled.
