This salad is one of my family's favorites. It's refreshing and easy to make. It keeps well, too.

Steps:
- 1. Prepare dressing first by combining in saucepan pineapple juice, sugar, beaten egg, flour and vinegar. Heat until boiling, stirring constantly. Let cool and then blend in whipped topping.
- 2. While dressing is cooling, combine apples, pineapple, marshmallows, and cocktail peanuts. Fold in cooled dressing.
- 3. Refrigerate at least four hours before serving. Keeps well.
