Tennessee's Zucchini Bars image

Number Of Ingredients 16

3/4 c butter or margarine, softened
1/2 c granulated sugar
1/2 c brown sugar
2 eggs
1 tsp vanilla
1 3/4 c all purpose flour
1 1/2 tsp baking powder
1 c coconut, flaked
2 c shredded zucchini
3/4 c walnuts, chopped
CINNAMON FROSTING:
1 c powdered sugar
1/2 tsp cinnamon
1 1/2 tsp butter or margarine, melted
1 tsp vanilla extract
2 1/2 Tbsp milk

Steps:

  • 1. BARS: Preheat oven to 350. Grease a 9 x 13" pan. Cream butter & sugar until fluffy. Add eggs, one at a time. Stir in vanilla, flour & baking powder. Mix thoroughly. Stir in coconut, zucchini and walnuts. Spread evenly in a well greased 9 x 13" pan and bake on 350 for approximately 40 minutes. Frost while still warm.
  • 2. CINNAMON FROSTING: Mix all ingredients together until smooth. Frost while warm and cut into bars.
