After tasting a wonderful pasta dish at an Italian restaurant, I experimented until I came up with this recipe. It's become one of our favorite low-fat meals. The riper the tomatoes, the better it is!

I would love to try this recipe, but I don't have a spiralizer. Do you think I could use a knife to cut the chicken into strips?

I'm not sure what I did wrong, but my dish turned out really dry. I think I might have overcooked the chicken.
