TOMATO ORANGE SOUP image

1/2 c butter and or olive oil
1 large onion diced
garlic minced
2 large 28oz cans diced tomatoes w juice
1 tsp pepper
1/2 tsp baking soda
1 tsp thyme
2 cups fresh orange juice
1 cup whipping cream, half & half or ?

Steps:

  • Saute onions and garlic in oil till soft then add tomatoes, spices and baking soda and cook for a few minutes till thick. Puree in blender till smooth. Do in batches cause its hot. Add juice and cream and taste for salt. Simmer slightly and serve w basil croutons
