Steps:
- Se cortan las patatas en rodajas pequeñas y finitas y se fríen a fuego lento para que no se doren rápido por fuera y queden crudas por dentro. Cuando la patata está a medio freir se le añade la cebolla picada. Añadir la patata frita y la cebolla todavía caliente a los huevos batidos (si se baten primero las claras y luego se añaden las yemas por separado sale más esponjosa). Se mezcla todo bien y se deja reposando para que la patata absorba bien el huevo. En una sartén pequeña pero honda se echa un poquito de aceite y se echa toda la mezcla se le va dando un poco de forma redonda por los bordes de la sartén cuanto más tiempo se deje en la sartén más cuajada quedará y al revés. Se le da la vuelta con un plato (o al aire cuando lo tengas dominado) y se deja otro poquito, mientras se le termina de dar forma.
