Steps:
- Mix breadcrumbs, shallots, 2 1/2 T oil, tarragon, and salt in a medium bowl. Mix in ground turkey; sprinkle with pepper. Form mixture into four 1/2-inch-thick patties. (Can be prepared 1 day ahead. Cover with plastic wrap and refrigerate.) Heat 1 T oil in heavy medium skillet over medium heat. Add patties. Cover and fry until just cooked through, about 3 minutes per side. Toip each patty with cheese. Cover and cook until cheese is just melted. Transfer burgers to buns, adding onion, tomato, and greens as desired.
