Warm and Cozy Gingerbread Muffins image

There's nothing more comforting than the smell of baking gingerbread. Great for the holidays or just any old time. I like a dollop of whipped cream on top of my gingerbread.

Number Of Ingredients 12

1/2 cup light molasses
1/2 cup mild honey
6 tablespoons butter
1/2 cup buttermilk
1 egg, slightly beaten
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1 1/2 teaspoons ground ginger
1/2 teaspoon salt
1 cup raisins

Steps:

  • Preheat the oven to 325.
  • Melt butter and warm honey and molasses in a saucepan over low heat.
  • Pour into a bowl and allow to cool if too hot.
  • Beat in egg and buttermilk.
  • In another bowl sift all the dry ingredients, including the cloves, nutmeg, and ginger.
  • Add the wet ingredients.
  • Stir only until all particles are moistened.
  • Fold in raisins.
  • Pour into lined muffin cups 3/4 full.
  • Bake for 25 minutes, or until tops are light brown.
