Steps:
- Clean the chicken breasts of excess fat, wash in cool water, pat dry, and set aside. In plastic freezer bag, combine cheese and bread crumbs. Put egg in bowl, break yolk. Dip 1 chicken breast in the egg, covering well on each side. Then place in bag, seal, and shake until breast is fully covered. Place in well-greased glass casserole dish. Repeat with second breast. Drizzle moderate amount of zesty Italian dressing on top of breasts. Place in pre-heated 350 degree oven. Cook for 25 minutes, then flip breasts, drizzle other side with dressing, and cook for another 10-20 minutes. Serve hot with tuscan potatoes, gnocchi, light red sauce, etc. Brand Recommendations: For Italian dressing, I recommend Newman's Own organic zesty Italian dressing. For the cheese, Sargento's makes a good, clean cheese in 6-cheese Italian.
