Zucchini Butterscotch Cookies image

3/4 c butter
1-1/2 c brown sugar
1 egg
1 tsp vanilla
3-1/2 c flour
2 tsp baking powder
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1-1/2 c grated, unpeeled zucchini
1 c butterscotch chips
1 c chopped walnuts

Steps:

  • 1. Cream butter and sugar. Add egg and vanilla and beat.
  • 2. Mix dry ingredients together; add to butter mixture. Stir in zucchini, chips, and nuts. Let stand a while as zucchini will give moisture and they will be easier to drop.
  • 3. Bake at 12 to 15 minutes at 350 degrees
