Steps:
- Schil de aardappelen, snij ze in stukken en doe ze in een pan met (koud) water. Snijd de speklapjes elk in 2 gelijke stukken en wrijf ze in met de kerriepoeder en zout. Snij de ui in halve ringen. Kook de aardappelen gaar volgens de aanwijzingen op de verpakking. Verhit opdertussen in een braadpan de boter en bak hierin de speklapjes aan beide kanten bruin. Voeg de ui toe en bak nog ca. 20 minuten. Spoel de zuurkool met koud water af in een vergiet. Schep 10 minuten voor het eind van de kooktijd de zuurkool en de paprika op de aardappelen. Giet het kookwater af (vang ca. 150 ml op), schenk de melk in de pan bij de aardappelen en zuurkool en breng alles aan de kook. Stamp de aardappelen en de groenten luchtig door elkaar. Neem de speklapjes uit de pan. Schenk het opgevangen kookwater bij de ui en het bakvet, roer de ketchup erdoor en breng de jus al roerend aan de kook. Geef de speklapjes met de curryjus apart bij de stamppot.
