ANGEL HAIR PASTA WITH VEGETABLES image

Yield 9- 3/4 cup serving

Number Of Ingredients 12

1/4 cup margarine
2 cups sliced broccoli flowerets
1 cup thinly sliced carrot
1/2 cup sliced green onions
1 Tablespoon dried basil
2 cloves garlic, minced
2 cups sliced fresh mushrooms
1/2 cup dry white wine
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces angel hair pasta uncooked
3 Tablespoons grated Parmesan cheese

Steps:

  • 1) Place margarine in a large skillet; place over medium heat until hot. Add broccoli and next 4 ingredients; saute 5 minutes or until vegetables are crisp-tender. Add mushrooms, wine, salt, and pepper; cook 2 minutes or until mushrooms are tender. Remove from heat; set aside, and keep warm. 2) Cook pasta according to package directions, omitting salt and fat. Drain. 3) And vegetable mixture and cheese to pasta; toss lightly.
