Categories     Pork     Stir-Fry

Yield 4 people

Number Of Ingredients 11

1/4 lb. transparent vermicelli
1/4lb. pork
2-3T. finely chopped green onion
1 T. finely chopped fresh ginger
1-2T. hot bean sauce
Seasonings:
1T. rice wine or dry sherry
1T. soy sauce
1-2t. salt
1 cup stock in water (beef or chicken)
4-6 T. peanut cooking oil

Steps:

  • 1. Soften the vermicelli by soaking it in warm water briefly, when the threads are transparent and soft, remove and drain. Place the vermicelli on cutting board and cut through it several times. If the vermicelli is not cut it is almost impossible to eat with any degree of finesse. 2. Chop the pork, green onion and giner finely. 3. In a bowl, combine the seasonings. Too Cook: 1. Heat 4-6T cooking oil in a wok until hot. Add the pork pieces and toss over high heat until the pork is gray. 2. Immediately add the green onion, ginger and hot bean sauce. Stir well. When the pork and giner have absorbed the red color from the bean sauce, and the aroma of the hot bean sauce is strong, add the seasonings. 3. Reduce the flame, stir once, and add the vimicelli. Simmer, stirring occasionally until the liquid has cooked down. Check for salt, remove to a serving bowl and serve hot.
